This Festive Bikini – The Method

WThis is a home-style interpretation of a drink found on the seasonal cocktail list. It's a batch pre-mixed that is packed with tastes of a Christmas time, rendering it excellent for a celebration. Save the extra syrup for breakfast cocktails, sweets, or for additional servings of the drink.

Bikini

Makes enough for 10 guests

For the Citrus Syrup (yields 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

For the Premix (makes 850ml, to serve 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, to finish

Instructions

Making the Syrup: Combine the listed components in a pot, bring to a light boil, stirring until the sugar dissolves. Next, take off the stove and let it to cool down entirely. Decant into an sealable bottle, close it and refrigerate it chilled, where it will keep for up to four weeks.

For the Premix: Mix all the spirits and syrup into one big jug, allow it to infuse for one hour, then strain best through muslin, so it's perfectly clear.

To serve: Pour 85ml of the cocktail base to a mixing glass containing ice, and stir gently for one minute until cold. Pour into a chilled martini glass or a similar vessel, top with a few cranberries and complete it by giving it a brief mist of mandarin oil over the top.
